Vegetarian Noodles (Lo Mein)

This is a very easy side dish and it goes well with almost every meat, whether it be a stew, grilled or baked. This is a definite crowd-pleaser and a big hit in my house and with my friends.

Serves 4 (side dish) or 2 (main dish)

Ingredients:

  • 1 6oz pack of chow mein stir fry noodles
  • 1 tbsp olive oil
  • 5 cloves garlic (minced)
  • 1 tbsp fresh ginger (finely minced)
  • 1 red sweet pepper (julienne)
  • 2 medium carrots (julienne)
  • 1 tbsp soy sauce
  • 1 tbsp Worcester sauce
  • ½ tsp garlic powder
  • ¼ tsp oregano
  • 1 tsp sesame oil
  • Salt and pepper to taste
  • Chopped parsley and scallions

Instructions:

  1. Boil noodles according to the pack instructions, and drain. Run cold water over noodles to prevent over cooking and sticking.
  2. Heat pan at medium heat and add oil. Add garlic and ginger and cook for 2-3 minutes constantly stirring.
  3. Add vegetables and stir. Cook for 2-3 minutes and add soy sauce, Worcester sauce, garlic powder, oregano and salt and pepper. Stir and cook for another 10 minutes on medium low heat until vegetables are cooked. Test for salt, add more if needed.
  4. Add sesame oil and stir. Add noodles and mix thoroughly until vegetables are incorporated.
  5. Top with parsley and scallions and serve.

Note: This goes with most meats and stews! You can make this a non-vegetarian meal by cooking chicken, pork, shrimp or beef and adding it to the vegetables at step 4.
