Chocolate Banana Muffins

I have adapted my Banana Muffin recipe to make this chocolate goodness which is healthier than your typical chocolate muffin. My toddler is a chocolate fiend. Not a surprise as both his parents are also chocolate fiends. So as a treat I make these healthier chocolate versions for him and quite frankly for us too! Makes 12 – 14 servings

Ingredients:

  • 3 large ripe bananas (mashed with a fork until all lumps are smooth)
  • 1 large egg
  • 1/3 cup sugar
  • 1 tsp vanilla essence
  • 3 tbsp butter (melted) – you can also use 1/3 cup unsweetened applesauce
  • 1 cup flour (spooned and leveled)
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/4 cup milk (if you want a more fudgy muffin, don’t add the milk)
  • 1/2 cup mini chocolate chips (you can leave these out if you prefer)

Instructions:

  1. Heat oven to 375 degrees and line a muffin tin with baking cups.
  2. Add egg, sugar, melted butter and vanilla essence to the mashed banana and whisk until smooth and the bananas are fully mashed.
  3. Sift together dry ingredients and incorporate into the wet ingredients. Make sure to not OVER MIX. Only mix until the flour is fully incorporated.
  4. If you are adding milk, do so now.
  5. Add chocolate chips and fill the muffin cups 3/4 the way.
  6. Bake for 18-20 mins until the muffin springs back when lightly tapped.
