Pan Seared Lamb Chops

These are quick, easy and packed with flavor. You can also marinate the lamb chops with these ingredients and grill if it’s nice out. I love lamb and nothing beats a delicious, well seasoned chop! This is pictured with my favorite Parmesan roasted potatoes and salad! Enjoy!!!

Makes 3 – 4 servings
Ingredients:
- 6 lamb chops
- 3 cloves garlic (minced)
- 1 tbsp fresh rosemary (finely chopped or ground with spice grinder) – use 1 tsp dry if fresh is unavailable
- 1 tbsp fresh thyme (finely chopped or ground with spice grinder) – use 1 tsp dry if fresh is unavailable
- 1/2 tsp garlic powder
- 1/2 tsp black pepper
- Pinch of cayenne pepper
- Pinch of paprika
- 2 – 4 tbsp olive oil
- Course sea salt
Instructions:
- Season both sides of the lamb chops generously with course sea salt and pepper.
- Mix garlic, herbs, garlic powder, cayenne pepper and paprika with olive oil.
- Rub over the lamb chops and let marinate in refrigerator for 30 minutes up to 4 hours.
- Heat a cast iron skillet on medium heat and coat with olive oil. Once hot, add lamb chops and cook for 3 – 4 minutes. Flip and cook another 3 – 4 minutes until desired doneness (3 – 4 minutes per side will give a medium cooked chop).
