Parmesan Roasted Potatoes

My go to easy side dish, especially when I am cooking for a dinner party. You can make this with baby potatoes or peeled russet potatoes, either way it is delicious. Enjoy this as a side with lamb chops, steak, chicken or burgers! You can even have it with your eggs at breakfast!

Makes 2 – 3 servings

Ingredients:

  • 1 lb potatoes (if baby potatoes cut in 1/2, if russet / Idaho, peel and cut in 1/8ths)
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • 1 tsp salt
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1/4 cup shredded Parmesan cheese
  • Black pepper

Instructions:

  1. Heat oven to 400 degrees F.
  2. Line a baking sheet with foil.
  3. Season potatoes with all ingredients, toss to ensure potatoes are fully coated. If all potatoes aren’t coated with olive oil, add a little more.
  4. Roast in oven for 40 – 50 minutes until golden brown. Turn potatoes after 30 minutes of roasting or just let them roast without turning, I have done it both ways.
  5. Taste and if needed, toss with a bit more salt.
  6. Top with chopped parsley and serve.
