Tzatziki!
Tzatziki is a delicious dip. It’s great with most grilled meats, or just with warm pita. This is my easy, go to recipe for those summer BBQs when I want to add some variety to my appetizers, as well as have a great side for my chicken or lamb kebabs! It’s also delicious with veggie kebabs! Basically I just dip everything in this! This is pictured with my Chicken Kebab and Delicious Pita recipes!
Ingredients:
- 1 1/2 cups plain greek yogurt (I use 0% or 2%)
- 1 English cucumber (seeded and shredded)
- 1/2 tsp salt
- 1/2 tsp ground cumin
- Zest and juice of 1/2 lemon
- 2 – 3 tbsp chopped dill
- 2 garlic cloves (minced)
- 1/4 tsp black pepper
- 1 tsp olive oil
- Salt and pepper to taste
Instructions:
- Cut English cucumber length wise and scoop out seeds.
- Using a shredder, shred cucumber and place in a cheese cloth. Wring out the water from the cucumber.
- Add cucumber, salt, cumin, lemon zest, lemon juice, garlic, dill and black pepper to yogurt and mix thoroughly.
- Taste and add additional salt, pepper or lemon juice to your liking.
- Add olive oil, cover and refrigerate until ready to serve.
