Zucchini Muffins

My toddler loves this as a meal, snack or just because. I usually make a batch and send one to daycare everyday in case he doesn’t like the food they are serving because he would probably eat this 9 times out of 10! It is also a great snack for adults. Awesome for meal prep as a side. They can also be frozen and warmed in 30 – 45 seconds in the microwave. Give it a try, healthy and delicious!

Makes 10-12 servings or muffins
Ingredients:
- 2 cups shredded zucchini (about 2 medium zucchinis)
- 2 eggs
- 1/3 cup white sharp cheddar cheese (shredded)
- 1/3 cup Parmesan cheese (shredded)
- 2/3 cup flour
- 3/4 tsp salt
- 1 tsp cumin

Instructions:
- Preheat the oven to 400 degrees F. Spray a muffin tin with cooking spray. Use a pastry brush to ensure the tin is properly coated.
- Shred zucchini and place in a cheese cloth. Wring out the water from the zucchini.
- Mix in egg, cheese, salt and cumin completely.
- Add flour and mix until fully incorporated.
- Spoon the mixture into the tin about 2/3 of the muffin cup.
- Bake for 20 – 25 minutes until the edges and the tops are lightly golden brown.
- Let cool in muffin tin for 2 minutes, then remove and finish cooling on a rack.
