Zucchini Muffins

Zucchini Muffins

My toddler loves this as a meal, snack or just because. I usually make a batch and send one to daycare everyday in case he doesn’t like the food they are serving because he would probably eat this 9 times out of 10! It is also a great snack for adults. Awesome for meal prep as a side. They can also be frozen and warmed in 30 – 45 seconds in the microwave. Give it a try, healthy and delicious!

Makes 10-12 servings or muffins

Ingredients:

  • 2 cups shredded zucchini (about 2 medium zucchinis)
  • 2 eggs
  • 1/3 cup white sharp cheddar cheese (shredded)
  • 1/3 cup Parmesan cheese (shredded)
  • 2/3 cup flour
  • 3/4 tsp salt
  • 1 tsp cumin

Instructions:

  1. Preheat the oven to 400 degrees F. Spray a muffin tin with cooking spray. Use a pastry brush to ensure the tin is properly coated.
  2. Shred zucchini and place in a cheese cloth. Wring out the water from the zucchini.
  3. Mix in egg, cheese, salt and cumin completely.
  4. Add flour and mix until fully incorporated.
  5. Spoon the mixture into the tin about 2/3 of the muffin cup.
  6. Bake for 20 – 25 minutes until the edges and the tops are lightly golden brown.
  7. Let cool in muffin tin for 2 minutes, then remove and finish cooling on a rack.
