Grilled Chicken Kebabs
This recipe is very flavorful, delicious and my go to recipe for my summer BBQs with friends and family. I marinate the chicken the night before the BBQ, skewer them with red peppers and red onions the morning of, and then thrown them on the grill once everyone is here. Most of the work is done ahead of time so you can enjoy time with your loved ones! It’s a crowd favorite!
Makes 4 – 6 Servings
Ingredients:
- 2 lbs chicken tenderloins or chicken breast (cut into cubes)
- 1 1/2 tsp salt
- 1 tsp ground cumin
- 1 tsp lemon pepper
- 2 tsp oregano
- 1 tsp paprika
- 1 tsp garlic powder
- Handful of cilantro chopped
- 1 tbsp olive oil
- 1/4 cup plain greek yogurt
- 1 lemon (juiced) and more for serving
- 1 red pepper cut into 1″ cubes
- 1 red onion cut into large cubes
- Metal or wooden skewers – if using wood remember to soak in water for at least 30 minutes
Instructions:
- Wash out the chicken cubes with juice of 1/2 lemon.
- Season the chicken with salt, lemon pepper, oregano, paprika, garlic powder and cilantro. Mix thoroughly to ensure all the chicken pieces are coated with the herbs and spices.
- Add the yogurt and olive oil and mix to incorporate fully.
- Cover with plastic wrap and refrigerate for 4 hours or overnight.
- Prior to grilling make skewers by adding chicken, onion and pepper.
- Heat the grill on medium – high heat. Once the grill is hot, place the chicken kebabs on the grill and cook for 10-15 minutes, turning once halfway through.
- Cook until the chicken is golden brown and cooked through (no longer pink on the inside).
- Transfer the kebabs to your serving platter and loosely tent with aluminum foil. Let the chicken rest for about 5 minutes.
- Squeeze fresh lemon juice over the chicken, if desired, prior to serving.
