Best Tuna Ever
Quick weeknight meal or make in advance for next day lunch. My toddler loves this with crackers and he is a very picky eater! My husband eats the entire thing if given the chance. So I always have to double this recipe! Try it!
Makes 2 servings
Ingredients:
- 1 can solid white albacore tuna in water (drained)
- ½ red onion (finely diced)
- 1/3 red pepper (finely diced)
- 3 tbsp mayonnaise (use the one made with olive oil or to be even healthier you can substitute 2 tbsp for Greek yogurt)
- ¼ tsp garlic powder
- ¼ tsp lemon pepper
- ¼ tsp paprika
- ½ lime (juiced)
- Salt and pepper to taste
- Handful cilantro (chopped)
Instructions:
- Drain tuna and place in a bowl. Using a fork, break up tuna.
- Add onion, red pepper and mayonnaise and mix thoroughly.
- Add garlic powder, lemon pepper, paprika, lime juice, salt and pepper to taste.
- Mix in cilantro and serve with pita chips or water crackers.
Also great in a sandwich. If you like a bit sweet and savory add some cranberries! It’s even more decadent if you pair with goat cheese!
