Lemon Garlic Herb Salmon

This is a quick, easy weeknight dish that is bursting with flavor. If you love salmon, lemon and garlic, you will love this one. A healthy option that pairs well with almost any side!

Makes 5-6 Servings

Ingredients:

  • 2 lbs salmon (I like baking salmon in pieces but you can bake it whole and cut after)
  • 2 lemons (juiced)
  • Handful of cilantro
  • 1 tsp lemon pepper
  • 1/2 tsp garlic powder
  • Salt to taste
  • 3 tbsp extra virgin olive oil
  • Zest from one lemon (always zest before juicing)
  • 5-6 cloves garlic (minced)
  • 2 tsp dry oregano
  • 1 tsp paprika
  • 1/2 tsp black pepper

Instructions:

  1. Wash out salmon with about 2 tbsp lemon juice or the juice of 1/2 lemon.
  2. Pat salmon dry and season with salt, lemon pepper, garlic powder and cilantro.
  3. Marinate for about 15 minutes.
  4. Heat oven to 375 degrees.
  5. Add foil to a baking sheet, enough to cover the salmon without touching the salmon.
  6. Mix together olive oil, lemon zest, remaining lemon juice, garlic, oregano, paprika and black pepper. Whisk until it emulsifies.
  7. Place salmon on foiled dish and cover with the mixture. Turn over and ensure both sides are covered.
  8. Bake covered, skin side down for about 15 minutes.
  9. Open foil and place salmon under the broiler for about 3 minutes.
