Lemon Garlic Herb Salmon
This is a quick, easy weeknight dish that is bursting with flavor. If you love salmon, lemon and garlic, you will love this one. A healthy option that pairs well with almost any side!
Makes 5-6 Servings
Ingredients:
- 2 lbs salmon (I like baking salmon in pieces but you can bake it whole and cut after)
- 2 lemons (juiced)
- Handful of cilantro
- 1 tsp lemon pepper
- 1/2 tsp garlic powder
- Salt to taste
- 3 tbsp extra virgin olive oil
- Zest from one lemon (always zest before juicing)
- 5-6 cloves garlic (minced)
- 2 tsp dry oregano
- 1 tsp paprika
- 1/2 tsp black pepper
Instructions:
- Wash out salmon with about 2 tbsp lemon juice or the juice of 1/2 lemon.
- Pat salmon dry and season with salt, lemon pepper, garlic powder and cilantro.
- Marinate for about 15 minutes.
- Heat oven to 375 degrees.
- Add foil to a baking sheet, enough to cover the salmon without touching the salmon.
- Mix together olive oil, lemon zest, remaining lemon juice, garlic, oregano, paprika and black pepper. Whisk until it emulsifies.
- Place salmon on foiled dish and cover with the mixture. Turn over and ensure both sides are covered.
- Bake covered, skin side down for about 15 minutes.
- Open foil and place salmon under the broiler for about 3 minutes.
