Spinach Orzo

I have a weak spot for orzo! I do love my carbs but something about buttery orzo just makes me extra happy. I feel a lot less guilty about the carbs when I have this orzo as it’s chuck full of healthy spinach 🙂 Spinach orzo is pictured below with my Herbs De Provence Steak recipe.

Makes 3 – 4 Servings

Ingredients:

  • 1 cup uncooked orzo
  • 3 cups water
  • 1 tsp salt
  • 1 tbsp butter
  • 3 cups fresh spinach
  • 1/2 shallot (minced)
  • 4 – 5 cloves garlic (minced)
  • 1/2 lemon zested and juiced
  • 1/4 tsp garlic powder
  • Salt and pepper to taste
  • 1/3 cup crumbled feta

Instructions:

  1. Boil 3 cups of water with 1 tsp of salt. Add orzo and cook according to package directions. Drain orzo once cooked to your preference (I like mine soft – cooked for 11-12 minutes). Drain orzo in a colander.
  2. In a pan on medium heat, add butter. Once melted, add shallots and saute for 1-2 minutes. Add garlic and saute for 1 minute.
  3. Add spinach and cook for 4-5 minutes until wilted. Add lemon juice and garlic powder.
  4. Add orzo and mix until combined. Stir in lemon zest and salt and pepper to taste.
  5. Top with crumbled feta and serve immediately.
