Spinach Orzo
I have a weak spot for orzo! I do love my carbs but something about buttery orzo just makes me extra happy. I feel a lot less guilty about the carbs when I have this orzo as it’s chuck full of healthy spinach 🙂 Spinach orzo is pictured below with my Herbs De Provence Steak recipe.
Makes 3 – 4 Servings
Ingredients:
- 1 cup uncooked orzo
- 3 cups water
- 1 tsp salt
- 1 tbsp butter
- 3 cups fresh spinach
- 1/2 shallot (minced)
- 4 – 5 cloves garlic (minced)
- 1/2 lemon zested and juiced
- 1/4 tsp garlic powder
- Salt and pepper to taste
- 1/3 cup crumbled feta
Instructions:
- Boil 3 cups of water with 1 tsp of salt. Add orzo and cook according to package directions. Drain orzo once cooked to your preference (I like mine soft – cooked for 11-12 minutes). Drain orzo in a colander.
- In a pan on medium heat, add butter. Once melted, add shallots and saute for 1-2 minutes. Add garlic and saute for 1 minute.
- Add spinach and cook for 4-5 minutes until wilted. Add lemon juice and garlic powder.
- Add orzo and mix until combined. Stir in lemon zest and salt and pepper to taste.
- Top with crumbled feta and serve immediately.
