Pan Seared Lamb Chops

These are quick, easy and packed with flavor. You can also marinate the lamb chops with these ingredients and grill if it’s nice out. I love lamb and nothing beats a delicious, well seasoned chop! This is pictured with my favorite Parmesan roasted potatoes and salad! Enjoy!!!

Makes 3 – 4 servings

Ingredients:

  • 6 lamb chops
  • 3 cloves garlic (minced)
  • 1 tbsp fresh rosemary (finely chopped or ground with spice grinder) – use 1 tsp dry if fresh is unavailable
  • 1 tbsp fresh thyme (finely chopped or ground with spice grinder) – use 1 tsp dry if fresh is unavailable
  • 1/2 tsp garlic powder
  • 1/2 tsp black pepper
  • Pinch of cayenne pepper
  • Pinch of paprika
  • 2 – 4 tbsp olive oil
  • Course sea salt

Instructions:

  1. Season both sides of the lamb chops generously with course sea salt and pepper.
  2. Mix garlic, herbs, garlic powder, cayenne pepper and paprika with olive oil.
  3. Rub over the lamb chops and let marinate in refrigerator for 30 minutes up to 4 hours.
  4. Heat a cast iron skillet on medium heat and coat with olive oil. Once hot, add lamb chops and cook for 3 – 4 minutes. Flip and cook another 3 – 4 minutes until desired doneness (3 – 4 minutes per side will give a medium cooked chop).
