Parmesan Roasted Potatoes
My go to easy side dish, especially when I am cooking for a dinner party. You can make this with baby potatoes or peeled russet potatoes, either way it is delicious. Enjoy this as a side with lamb chops, steak, chicken or burgers! You can even have it with your eggs at breakfast!
Makes 2 – 3 servings
Ingredients:
- 1 lb potatoes (if baby potatoes cut in 1/2, if russet / Idaho, peel and cut in 1/8ths)
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1/2 tsp paprika
- 1 tsp salt
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1/4 cup shredded Parmesan cheese
- Black pepper
Instructions:
- Heat oven to 400 degrees F.
- Line a baking sheet with foil.
- Season potatoes with all ingredients, toss to ensure potatoes are fully coated. If all potatoes aren’t coated with olive oil, add a little more.
- Roast in oven for 40 – 50 minutes until golden brown. Turn potatoes after 30 minutes of roasting or just let them roast without turning, I have done it both ways.
- Taste and if needed, toss with a bit more salt.
- Top with chopped parsley and serve.
