Lemon Herb Shrimp
I love shrimp! It’s probably one of my favorite foods and this is one of my favorite ways to cook it! Easy, delicious and packed with awesome lemon and herb flavors. You can swap out the herbs I used for your favorites. In this recipe I used cilantro and rosemary, but I have also made this dish with basil, parsley and thyme! All variations were super delicious!
Makes 2 – 3 Servings
Ingredients:
- 1 lb large shrimp
- 1 lemon (zested and juiced)
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp paprika
- Handful cilantro (chopped)
- 1/4 tsp garlic powder
- 1 -2 tbsp olive oil
- 1 shallot (sliced)
- 4 cloves garlic (sliced)
- 3 tbsp butter
- 1 tbsp fresh rosemary (finely chopped)
- 1 tbsp fresh cilantro (finely chopped)
- Salt and pepper to taste
Instructions:
- Peel and devein shrimp. Add 1/2 the lemon juice to the shrimp and mix. Rinse out the lemon juice with water and drain shrimp.
- Season shrimp with salt, black pepper, paprika, chopped cilantro and garlic powder.
- Marinate for at least 30 minutes. You can cook immediately but I like to let it sit for a bit.
- Add 1 tbsp olive oil to sauce pan on medium high heat. Once oil is hot, add shrimp to the pan. Be careful not to overcrowd. You will have to cook the shrimp in batches. Cook on each side for 2 – 3 minutes. Add more oil if needed in between batches.
- Remove shrimp from the pot and set aside in a dish.
- Add 1 tbsp olive oil to the same pan on low heat and saute shallots for 2 minutes. Add garlic and cook another minute.
- Add finely chopped herbs and cook for 30 seconds. Add butter, the other 1/2 of lemon juice and lemon zest.
- Cook on low heat for a minute. Season with salt and pepper as needed.
- Add shrimp to sauce and cook in the sauce for about 1 minute.
- Serve immediately with your favorite side dish.
