Tzatziki!

Tzatziki is a delicious dip. It’s great with most grilled meats, or just with warm pita. This is my easy, go to recipe for those summer BBQs when I want to add some variety to my appetizers, as well as have a great side for my chicken or lamb kebabs! It’s also delicious with veggie kebabs! Basically I just dip everything in this! This is pictured with my Chicken Kebab and Delicious Pita recipes!

Ingredients:

  • 1 1/2 cups plain greek yogurt (I use 0% or 2%)
  • 1 English cucumber (seeded and shredded)
  • 1/2 tsp salt
  • 1/2 tsp ground cumin
  • Zest and juice of 1/2 lemon
  • 2 – 3 tbsp chopped dill
  • 2 garlic cloves (minced)
  • 1/4 tsp black pepper
  • 1 tsp olive oil
  • Salt and pepper to taste

Instructions:

  1. Cut English cucumber length wise and scoop out seeds.
  2. Using a shredder, shred cucumber and place in a cheese cloth. Wring out the water from the cucumber.
  3. Add cucumber, salt, cumin, lemon zest, lemon juice, garlic, dill and black pepper to yogurt and mix thoroughly.
  4. Taste and add additional salt, pepper or lemon juice to your liking.
  5. Add olive oil, cover and refrigerate until ready to serve.
