Spicy Chicken Tacos
One of my favorite weeknight meals. It takes about 20 minutes to prep all the components and 20 minutes to cook the chicken! Quick, simple and delicious. This recipe is a bit spicy because I use adobo sauce to marinate the chicken. I use a 7 oz can of peppers in adobo sauce but you can also make your own from scratch. Toppings are also a preference, below has a couple options we love! I also add my favorite Lime Creme to almost every type of taco I make and I love my Mango Salsa in this taco as it helps to moderate the spicy chicken a bit. Hope you like this one!
Ingredients:
- 8 soft flour or corn taco shells
- 2 lbs chicken tenders or chicken breasts
- 1 lime (half juiced, half cut into wedges)
- 1 tsp cumin
- 1 tsp garlic powder
- 1/2 tsp black pepper
- 1/2 tsp salt
- 7 oz can of chipotle peppers in adobo sauce (I don’t use the peppers in the recipe, just the sauce)
- 2-3 tbsp olive oil
- 1 large tomato (diced)
- Handful of cilantro (chopped)
- Lime Creme
- Mango Salsa
Instructions:
- Wash out chicken with juice of half a lime. Season chicken with cumin, garlic powder, black pepper, salt, adobo sauce and half the the cilantro. Marinate the chicken for 30 minutes to 4 hours. The longer it marinates the spicier it will be.
- Add 1 tbsp of olive oil on medium high heat. Cook chicken in small batches for 5-7 minutes. Turn and cook for another 5-7 minutes until browned on each side. See picture above. Add more oil between batches.
- Season diced tomato with salt and pepper to taste.
- Lightly toast taco shell and layer with chicken, tomato, Mango Salsa, Lime Creme, chopped cilantro and a lime wedge.
- You can also substitute the mango salsa for avocado (chopped and seasoned with salt, pepper, cilantro and lime juice).
- You can also add cheddar cheese to any of these variations!
